BANANA WALNUT BREAD

Lucky me! All of my bananas went soft and the skins were starting to turn brownΒ and as I was about to throw them out my hubs ran into the kitchen in slow motion screaming “NOOOOO MAKE BANANA BREAD!!”… ok maybe it wasn’t that dramatic.
I really just wanted to lay in bed and finish dying from this flu, but I pulled out the old recipe book and whipped this up. It’s so good with a lot of butter * I also put cheese on mine, don’t judge me, I love cheese <3* Β Man am I glad I thought to make this πŸ˜‰
INGREDIENTS
  • 1 1⁄4Β cups sugar
  • 1⁄2cup butter or 1⁄2 cupmargarine, softened
  • 2Β eggs
  • 1 1⁄2Β cups mashed very ripeΒ bananas (3-4 medium)
  • 1⁄2Β cup buttermilk
  • 1 teaspoon vanilla
  • 2 1⁄2Β cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup chopped walnuts, if desired

DIRECTIONS

  1. Heat oven to 350 degrees. Grease bottoms only of 2 (8X4 inch) loaf pans.
  2. In large bowl, mix sugar and butter. Add eggs, bananas, buttermilk and vanilla; beat with electric mixer on medium speed until smooth.
  3. Stir in flour, baking soda, salt and nuts (if using) just until moistened. Pour batter into pans.
  4. Bake for one hour or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans to cooling rack. Cool about 1 hour before slicing.

TIP : If you don’t have buttermilk, you can add 1 tbsp of lemon juice or white vinegar to 1 cup of milk and let it sit for 10 minutes before using in your recipe πŸ™‚
